Introduction             Pepper is an important agricultural crop not only because of its economic importance but also due to the nutritional, medicinal value of its fruits as well as being excellent source of natural colours and antioxidant compounds (Howard et al., 2000). It is the world’s second important vegetable, ranking after tomatoes and it is the most produced type of spice flavouring and colouring for food while providing essential vitamins and minerals. The nutritional value of pepper merits special attention. It is a rich source of vitamins A and E. Both hot and sweet pepper contains more vitamin C to prevent flu colds than any other vegetable crop (Bosland and Votava, 2000). In many household, pepper provides the only needed flavor to enhance intake of otherwise blend diets.   Rubatzky and yonaguchi 1997 pointed out, in addition to the use of pepper as food that pepper is used for cosmetic production, condiment and medicine as well as ornamentals in gardens.
